Cafe Zupas. Yup, it's not a person, it's a place. A cafe, really. And boy howdy is it delicious! We have been impressed every single time we've eaten there. If it was cheaper, we'd eat there even more. If you haven't enjoyed their unique offerings, you haven't lived. True story.
The other day (Friday, to be exact) we were so exhausted from moving our mountains of stuff from my parents' house that we were desperate for good eatin'. Luckily, Lyndsie had already mentioned returning to this house of great grub, and it was a short road between 'should we?' and 'duh, of course we should!'
If you haven't been to Zupas, let me tell you a little bit about the place. If you're in Utah, there are five locations where you, too, can experience the magic.
Now I'm guessing you're sitting there, scratching your head, wondering what on earth I am talking about. Well, Zupas is, as I mentioned, a cafe. Their specialties lie in soups, salads, sandwiches, and desserts. Myself, I am a sucker for all but the sandwiches. Their soups are made fresh daily and are perhaps the best soups on the planet. Their salads are unique, flavorful, fresh, memorable, and downright fantastic. Seriously, even I will eat their salads and I don't otherwise like salad much at all. Mmmmm.... The sandwiches are okay, but not particularly exciting. And their desserts are so delightful you'll think you died and found paradise.
For our last visit, I ordered the 'Try 2' special (soup and salad for me) and got the Lobster Bisque soup, *drool*, and the MangoBerry Salad. That one's a seasonal special so I can't find it online, but imagine a bed of greens with strawberries, blueberries, mangoes, cinnamon coated crushed almonds, and a mango yogurt dressing. I am seriously salivating just remembering it. It's like a mouthgasm with every bite. (That's almost as good as Lyndsie's cooking, to give you some scale as to the magnitude of flavor)
Zupas seems able to take even the most mundane of foods, like tomato soup for example, and turn it into a culinary masterpiece. Their tomato basil soup is so tasty, you don't even need a grilled cheese sandwich to make it edible. It's so good, in fact, that we've ordered it on a number of occasions to use as a pasta sauce. It makes the best tortellini you'll ever taste!
Finally, let me talk to you about a vegetable spat out from the very bowels of hell. Of course I'm talking about the luciferous (that's a great Lyndsie term. It'll catch on, it's so clever) cauliflower! Yet here at Zupas they not only tame the wild, domonic cauliflower (it's not really a flower, is it? Can a flower really be that evil?) but they cream it up into a Wisconsin Cauliflower cheese soup that is... dare I say it... fantastic! Not just edible, people, but divine. Who else can boast such a transformation from the awful to the splendid? Nobody, that's who.
I guess I've carried on long enough about the excitement that is Zupas. Just go down and check them out. You won't be disappointed!

Umm.. That cauliflower had it coming. Impressive stuff.
I may be on the other side of the country, but you've just about talked me into getting on a plane just for their soup! Sounds super yum!
